Vegan Pancakes with Styrian Gold Pumpkin Seed Protein Powder
The Fluffiest Best Tasting Vegan Pancakes
Ingredients:
1 cup organic gluten free flour (yucca flour or almond flour)
1 tablespoon Styrian Gold Pumpkin Seed Protein Powder
1 tablespoon organic coconut sugar,
1 tablespoon baking powder
1/2 tablespoon Himalayan salt
1 cup organic coconut milk or any non-dairy milk
1 teaspoon organic apple cider vinegar
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon cardamom
Maple Syrup, seasonal fruits to taste.
Preparation:
In a medium bowl mix all the dry ingredients and stir to combine.
In another medium bowl add the wet ingredients, coconut milk, apple cider vinegar & vanilla and stir to combine.
Pour the liquid mixture into the dry mixture and whisk until smooth. Don’t over mix the batter!!
Let batter rest at least 10 minutes
Pour about 1/2 cup of batter onto a nonstick pan or griddle over medium heat.
When the top begins to bubble, flip the pancake and cook until golden.
Serve warm with maple syrup or seasonal organic fruits!
